The area of production of the PDO Polesano White Garlic includes 29 Municipalities of the Rovigo Province. The PDO Polesano White Garlic excellent quality is due to the soil type and to the typically dry temperate climatic conditions of Polesine geographic area. Soils are medium-textured, clay, well-drained and particularly fertile due to the Po and Adige rivers that in the course of the centuries have more than once flooded the plains.

Also the mineral composition of this soil plays an important role: calcium and magnesium help to improve the bulb quality whereas the high content of phosphorus and potassium is responsible for the typical white colour and increases the preservability of the product. Moreover the worth of the PDO Polesano White Garlic lies also in another very important element bound to the traditions embedded in the history of this territory, i.e. the “human” factor and the “know how”.

We refer particularly to the skills passed from generation to generation to select the best bulbs (also called heads) by hand so as to sow them, as well as to the hand-made garlic braids (called “resta”), big braids and even garlic bunch of different dimensions.
